라떼·케이크·맥주 릴레이 출시 지난해 전 세계를 뒤흔든 웰니스(Wellness) 트렌드의 중심이었던 말차의 뒤를 이을 식재료로 진한 보랏빛을 띠는‘우베’(Ube)가 주목받고 있다.방탄소년단(BTS)의 컴백 공연을 기점으로 보라색 아이템의 인기가 치솟는 가운데 우베를 활용한 제품이 줄줄이 줄시되는 추세다. 
22일 식품업계에 따르면 최근 전국의 카페와 베이커리,neko 777이자카야 등에서 우베를 활용한 라떼,케이크,neko 777맥주,막걸리 등이 출시되고 있다.우베는 필리핀에서 흔히 먹는 보라색 참마의 일종으로,자색고구마나 타로와 겉모습이 유사하다.블루베리와 같이 항산화 성분인 안토시아닌이 풍부해 인공 색소 없이도 천연 보랏빛을 띈다.비타민C,칼륨 등이 함유돼 있어 건강을 생각하는 소비자들의 발길도 끌어당기고 있다는 평가다.
특히 말차처럼 뚜렷한 색을 띠고 있어 Z세대들 사이에서‘인스타그래머블’한 아이템으로 급속하게 떠오르는 모양새다.일부 카페에선 우베 100%로 만들어진 분말(파우더)을 구하기가 힘들어 메뉴 개발에 어려움을 겪고 있는 것으로 전해졌다.서울 용산구의 한 카페 운영자는 “우베 파우더 가격 인상과 품절 사태를 고려해 20㎏를 선주문했다”고 말했다.
미국 Z세대(1996~2010년생) 사이에서‘우베 열풍’이 불며 필리핀 생산 물량 대부분이 미국으로 유입되고 있기 때문이란 분석이다.필리핀은 연간 1만4000t 이상의 우베를 생산하는 주산지다.필리핀 농무부에 따르면 2019~2024년 우베 수출량의 절반 이상이 미국으로 수입됐다.지난해 1~9월 필리핀의 우베 수출량은 전년 같은 기간보다 43% 늘었다.
블룸버그통신에 따르면 지난해 팬케이크,쿠키,아이스크림(사진),neko 777라떼,칵테일 등 우베를 활용해 만들어진 신메뉴는 2021년 대비 세 배가량 늘었다.미국 스타벅스에서도 최근‘아이스 우베 코코넛 마키아토’를 출시했다.
